Strawberry Spinach Salad

This salad is modeled after one of my favorite lunch treats when I’m out with customers. It is a fabulous, refreshing meal after working in a hot area of one of the plants. I love when the strawberries were bought that day at the stand on the side of Airline Hwy. (US 61 for those not in South Louisiana)…

First toast about a 1/4 cup of walnuts in a skillet. Heat them up about 3 minutes on medium high heat. Turn the fire off when you start to smell the nutty goodness. Set aside.

Next, grab about 3 cups of fresh baby spinach and top with these ingredients:

  • 1/2 cup fresh strawberries, topped and sliced
  • the toasted walnuts
  • 1/4 cup crumbled feta cheese
  • 2 TBSP Balsamic vinegar
  • 1/4 cup Extra Virgin Olive Oil
  • Salt and Black Pepper

Enjoy with Chicken or Shrimp or just extra strawberries❤️
