Jenn’s Kitchen Blog Pancake Mix

Everything has been a little crazy at the grocery stores through this past year, From toilet paper to baking supplies, the shelves have really been a struggle! My latest missing ingredient was pancake mix, like Bisquick(R) or Hungry Jack(R) or Aunt Jemima(R). What’s a girl to do? I came up with my own using Google and watching Netflix cooking shows. This recipe works in my kitchen for Pancakes, Waffles, and Dumplings.

This recipe works in my kitchen for Pancakes, Waffles, and Dumplings. It also fits into #eatlessmovemoreprayalot because I know EXACTLY what is in the mix.

Tools:

  • Mixing Bowl
  • Measure-All Cup
  • Pastry Blender or Food Processor

Ingredients:

  • 3 Cups All Purpose Flour
  • 1 1/2 TBSP Baking Powder
  • 1/2 TBSP Salt
  • 1/2 Cup Vegetable Shortening, like Crisco(R), Cubed

Instructions:

Option 1: In a mixing bowl, whisk dry ingredients together. Add the cubed shortening and mix with pastry blender until the consistency of cornmeal. It took me about 20 min.

Option 2: Pulse all ingredients in a food processor about 30 seconds.

The mixture keeps in a cool dry container for about 3 months.
