Fresh Ginger Gingerbread Cookies

Nothing says Christmas like the smell of Gingerbread baking. Cinnamon, Nutmeg, Cloves, and Ginger just make the whole house welcome Santa with open arms. These cookies work well with any holiday motif. Ice with Royal Icing, which you can tint with food colorings and flavors.

Ingredients:

  • 4 1/2 cups all-purpose flour
  • 1 1/2 tsp baking soda
  • 3/4 tsp baking powder
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 3/4 cup packed light brown sugar
  • 2 large eggs, room temperature
  • 2 tsp peeled freshly grated ginger
  • 1 tsp ground ginger
  • 1 1/2 tsp cinnamon
  • 1/2 tsp cloves
  • 2 tsp salt
  • 1 cup dark molasses
  • Extra flour for rolling out

Instructions:

  1. In a medium mixing bowl, whisk together the flour, baking soda, baking powder, ground ginger, cinnamon, cloves, and salt. Set aside.
  2. In a stand mixer, cream the butter and sugar until smooth. Add eggs one at a time; then add the fresh grated ginger. Finally add the molasses. Use the spatula to scrape down the sides.
  3. Add the flour mixture to the butter mixture and mix well.
  4. Scrape the dough into a plastic bag or plastic wrap and chill at least 2 hours.
  5. Preheat the oven to 350 deg
  6. Line the baking sheets with the baking mats.
  7. Flour pastry mat and rolling pin. Start rolling out half of the dough to 1/4 inch thick and cut shapes with cookie cutters or rolling cookie cutter.
  8. Place the cookies 1″ apart on the lined cookie sheet and bake 8-12 min depending on the size of the cookies. The bottoms will be barely browned.
  9. Cool on cooling racks and decorate as you like.

My cousin gave me this recipe a few years ago. She really makes the best macarons on the planet. Her baking skills are amazing. She makes these at Christmas to give as gifts. Sometimes she uses cream cheese icing to decorate, but usually Royal icing is the favorite because it holds the shape in travel.
