Everybody needs a quick cookie when the kids have a school party or there is a surprise teenager sleepover with no “snacks.” I add these to my cookie boxes for color too. They are chewy, cakey (is that a word?) cookies. They are very similar to my Jack Daniels Snockerdoodles in process.

Ingredients & Instructions:
1 package of Lemon Cake Mix
2 eggs, beaten
1/3 cup vegetable oil
1 Tbsp Fresh Lemon Juice
Lots of powdered sugar
Mix in order. Use a Small Stainless Scoop to drop in the powdered sugar and roll. Then drop on a parchment lined cookie sheet. Bake 9 minutes at 350 degrees.
