The spring garden is planted, and the harvest will soon produce one of my favorite vegetables – Zucchini! This recipe is quick and easy and delicious!
Tools:
- 10″ Nonstick Skillet
- Utility Knife
- Cutting Mat
Ingredients:
- 2 Medium Zucchini
- 1 Scallion, sliced
- 1 Clove Garlic, minced
- Salt, pepper, and dried basil
- Avocado oil
Instructions:
- Slice the zucchini in 1/4″ slices
- Thin slice the scallion; you can use half a yellow onion if you can’t find scallions.
- Mince the garlic.
- Drizzle the avocado oil in the nonstick skillet.
- Combine the vegetables in the skillet and season with salt, pepper, and basil.
- Saute on medium heat until the zucchini is tender.
