Zucchini & Scallions

The spring garden is planted, and the harvest will soon produce one of my favorite vegetables – Zucchini! This recipe is quick and easy and delicious!

Tools:

  • 10″ Nonstick Skillet
  • Utility Knife
  • Cutting Mat

Ingredients:

  • 2 Medium Zucchini
  • 1 Scallion, sliced
  • 1 Clove Garlic, minced
  • Salt, pepper, and dried basil
  • Avocado oil

Instructions:

  1. Slice the zucchini in 1/4″ slices
  2. Thin slice the scallion; you can use half a yellow onion if you can’t find scallions.
  3. Mince the garlic.
  4. Drizzle the avocado oil in the nonstick skillet.
  5. Combine the vegetables in the skillet and season with salt, pepper, and basil.
  6. Saute on medium heat until the zucchini is tender.
