Weeknight Vegetables

Do you need something to kick up those boring vegetables? I love to use herbs in my veggies. Basil, oregano, & thyme make those vegetables just wake up!

  • Cutting Mat
  • 5″ Santoku Knife
  • Vegetable Peeler
  • Garlic Press
  • Nonstick Skillet

Ingredients:

  • 2 Yellow Squash
  • 2 Small Zucchini
  • 1/4 Green Bell Pepper
  • 1/4 Yellow Bell Pepper
  • 1/4 White Onion
  • 1/4 Purple Onion
  • 1 TBSP Oregano
  • 1/2 TBSP Thyme
  • 3 Garlic cloves
  • Basil & Salt or Sweet Basil Salt
  • Avocado Oil or Olive Oil

Instructions:

  1. Peel Zucchini and Squash
  2. Cut on Medium Dice and quarter the larger pieces
  3. Julienne the Peppers and Onions
  4. Ring the skillet with Avocado or Olive Oil
  5. Season all of the vegetables with Herbs and Salt
  6. Saute for 10 – 15 minutes on Medium Heat until the onions are translucent.
