Winter Gardens cheer me up when the weather is dreary. Bright Orange Carrots, Red Cabbage, Green Cabbage, and all the colors of the Cauliflower and Broccoli. I harvested cabbage and carrots over the weekend, and created a slaw loosely based on Zoe’s vinegar based cole slaw.

Ingredients:
- 1 cup chopped Red Cabbage
- 1 cup chopped Green Cabbage (I used Platinum Dynasty)
- 1 shredded Carrot
- 1/4 Cup Pine Nuts
- 1/2 Cup Crumbled Feta Cheese
- Salt and Pepper
- 1/4 Cup Red Wine Vinegar
- 1/3 Cup Avocado Oil
- 1/4 Chopped Green Onions
Instructions:
- Shred the Cabbage with the Simple Slicer
- Shred the Carrot with Adjustable Double Grater
- Measure Liquid, Cheese, Nuts, and Green Onions with Mini Measure-All Cup
- Mix Well, and Serve or Marinate over night in the refrigerator for best taste.
