My Herb Project

My favorite herb garden in the world is at Houmas House. It is beautiful and well tended. I have tried to grow herbs like that garden every single spring of my life. Then 2020 happened, and I had the Time to work on my herb garden and Tend it. What do you know? It thrives in the corner of the yard behind my kitchen. Like any other relationship, quality time makes a difference in the health.

My husband built a small drying rack for the window in the kitchen that is absolutely perfect for hanging the herbs for a week or two of dehydration. My process is simple:

  • Harvest the herbs with Kitchen Shears making clean cuts on the stem
  • Twist tie the bunch and LABEL with the herb and date harvested. A lot of herbs look very similar when they are dried.
  • Package labeled. I used this Kamota Spice Jar that comes in a 36 pack with labels and a funnel.
