Christmas Cookies!!

Nothing says Christmas like cookies! Bring on the chocolate, cinnamon, and flour in every corner of the kitchen. I love to bake cookies. Every year, I bake over 1000 cookies in one weekend to deliver to my customers (in my day job). A homemade cookie makes them feel like someone cares, and maybe, just maybe, helps them have a good memory flash with the first taste.

My traditional cookie menu is the following:

  1. Classic Chocolate Chip
  2. Oatmeal Hubcaps (Chocolate Chip, Raisin, Cranraisin, and Pecans)
  3. Jack Daniels Snockerdoodles
  4. Peanut Butter Blossoms
  5. Peanut Butter Dark Chocolate Chip
  6. Ginger Molasses Cookies
  7. Gingerbread
  8. Lemon Snowballs
  9. White Chocolate Macadamia
  10. Sugar Cookies

The basic cookie procedure is:

  1. Cream the fat and sugar
  2. Add eggs and extract
  3. Whisk the dry ingredients and sift if necessary
  4. Add dry to wet
  5. Fold in the “mix-ins”
  6. Some recipes need refrigeration at this step
  7. Roll out or Drop on Cookie sheets
  8. Bake at constant heat
  9. Cool
  10. Package
