Nothing says Christmas like cookies! Bring on the chocolate, cinnamon, and flour in every corner of the kitchen. I love to bake cookies. Every year, I bake over 1000 cookies in one weekend to deliver to my customers (in my day job). A homemade cookie makes them feel like someone cares, and maybe, just maybe, helps them have a good memory flash with the first taste.
My traditional cookie menu is the following:
- Classic Chocolate Chip
- Oatmeal Hubcaps (Chocolate Chip, Raisin, Cranraisin, and Pecans)
- Jack Daniels Snockerdoodles
- Peanut Butter Blossoms
- Peanut Butter Dark Chocolate Chip
- Ginger Molasses Cookies
- Gingerbread
- Lemon Snowballs
- White Chocolate Macadamia
- Sugar Cookies
The basic cookie procedure is:
- Cream the fat and sugar
- Add eggs and extract
- Whisk the dry ingredients and sift if necessary
- Add dry to wet
- Fold in the “mix-ins”
- Some recipes need refrigeration at this step
- Roll out or Drop on Cookie sheets
- Bake at constant heat
- Cool
- Package
