Salads should be beautiful and delicious. This salad definitely meets those criteria! Bold colors and good flavor make my “house” salad a family favorite. The ingredients are simple and flavorful. It even makes the teenagers come back for more!

- Kitchen Shears
- Salad Tongs
- Shredder
- Sharp Knife
- Prep Bowls
- Storage for the Dressing
Ingredients:
- 1 cup Iceberg Lettuce
- 1/2 cup Butter Lettuce
- 1/2 cup Spinach
- 1/4 cup Carrots
- 1/2 cup Cucumber
- 1/4 cup Red Onions
- 4-10 Cherry Tomatoes
- 1 clove Garlic
- 1 tsp Parsley
- 1 tsp Thyme
- 1 tsp Oregano
- 1 tsp Basil
- 1/3 cup Feta Cheese
- Salt & Pepper to taste
Instructions:
- Slice the onions, mince the garlic, and quarter the cherry tomatoes. Set aside covered in Red Wine Vinegar.
- Mince 1 tsp each of the fresh Basil, Oregano, Thyme, and Parsley. Cover in Olive Oil or Avocado Oil and set aside.
- Rip the lettuces & spinach; add to salad bowl.
- Cut the cucumber into 1/4″ cubes; add to salad bowl.
- Shred the carrots into the salad bowl or add Marinated Carrots to the bowl.
- Optional: add more quartered cherry tomatoes to the salad bowl.
- Combine the oil and vinegar layers and mix vigorously.
- Pour in dressing and toss with the salad tongs. I use about 1/3 of the dressing for a salad. Save the remainder in the refrigerator.
- Serve!
