My Mom’s Green Beans

My mom loved to eat fresh snapped green beans. The secret was in the seasonings. They were simple and delicious. Everything in her kitchen had four basic ingredients: Salt, Fat, Heat, & A Lot of LOVE.

The Green Beans start with Bacon Grease. Every Southern Kitchen has. a container of Bacon Grease. Take a teaspoon scoop of bacon fat for each cup of green beans. Saute’ half of a white onion for each cup of beans, and add at least two minced cloves of garlic. Cover with water. Add Salt & Black Pepper to taste and simmer for at least one hour, but usually two hours. Don’t let them run dry….
