“What do you want for dinner? I don’t know, what do you want?” Sound familiar? Of course it does. This conversation happens most afternoons when my husband calls to say he is on the way home.
My daughter and I decided to take matters into our own hands on Monday. I stopped at the store for a few basic ingredients:
- Boneless, skinless Chicken Breasts – get thin sliced if available
- Sliced Mozerella
- Italian Style Bread Crumbs
- A jar of your favorite Marinara sauce; I’m linking up one we really like. http://www.michaelsofbrooklyn.com
- Pasta
Directions
- Preheat the oven to 350 deg
- Grab your favorite Rectangle Baker or Glass Baking Dish and spread about a quarter of the jar on the bottom of the dish.
- If the chicken looks thick, cut in half lengthwise and pound out with a meat tenderizer. You want the chicken to be about 1/4″ thick to cook quickly.
- Salt and Pepper the Chicken. I even use a little bit of Sweet Basil Salt.
- Coat the chicken with the Italian Bread Crumbs, and place in the Baker
- Add sauce on the top, and top with a slice of Mozarella
- Bake for 30 min (while you make the Noodles or the Zoodles).
The best thing about this dish is having time to move around the kitchen. It doesn’t take a lot of time to pull together, and your family will be wanting seconds.
